Vinification comes about thanks to yeasts which provoke alcoholic fermentation. taking about 15-20 days and is completed in stainless steel vats kept at a constant temperature of 18-20° C (65-68° F).Grapes coming from a single vineyard are usually vinified together and the wineries keep the different lots separate. The bubbles!, The technique of making the wine sparkling utilizes the charmat method, by a second fermentation in tank. The wine is then bottled under pressure to retain the sparkle. All of the bottles are green in colour to ensure that the wine is not damaged by light. After 30-40 days, the wine is ready to be released.

Mionetto is located in the heart of the ValdobbiadeneConegliano D.O.C. in the province of Treviso. The winery was founded in 1887 by Francesco Mionetto. His descendent the ebullient Sergio Mionetto is still at the forefront of Prosecco production and knows all the local growers intimately. The wonderful Prosecco grape is at the heart of everything they do. Planted on rolling hills stretching over 15 small towns at the foot of the imposing pre Alps the Prosecco D.O.C is among some of the most beautiful vineyard areas of the world.

Vineyard information: 

The Prosecco is a vigorous and hardy vine with looselypacked winged clusters of beautiful golden yellow berries nestled amongst large bright green leaves. Verdiso Perera and Bianchetta vine varieties which are considered to be of lesser stature can be used up to a maximum of 15%. The pressing takes place when the grapes harvested by hand and gathered from the various vineyards are transported to the winerywhere the work of vinification begins. Only the freerun juice from the heart of the berry is extracted and a a maximum of 70 litres of wine may be obtained from 100 kg. of grapes.

Tasting Note: 

The selection of the best Prosecco DOC grapes produces a fine sparkling wine with a straw yellow in colour with subtle green highlights; the aroma is that of typical and unmistakable tart apple with hints of wild fruit that fades into intense floral notes. The palatee is soft velvety and fresh at the same time with an explosion of fine bubbles that enhances the excellent combination of fruit and structure. Residual sugar: 18 g/l.
