The Txomin wine is made from the estates own fruit and is hand picked due to the nature of the slopes. The fruit is very gently crushed in pneumatic Wilmes presses to provide a fresh juice, with care being taken not to receive colour from the black grapes. Everything about the process is built around preserving freshness and fruitiness. The final wine has a slight spritz on opening which is typical of the wine and makes it ideal for pouring in the traditional flat bottomed glasses which dissipate the sparkle.

This rare Basque Country white wine is called txakoli on home ground and chacolí elsewhere in Spain. The DO, which encompasses the growing area in the province of Guipuzcoa (Gipuzkoa), is called Getariako Txakolina in Basque. In Getaria, txakoli is poured into characteristic flat-bottomed tumblers from a height and then drunk before it loses its sparkling edge, known as tximparta in Basque. The Chueca family has been making wine for five generations and are renowned for the quality and subtley of their wines. They are further recognised for their efforts in growing and vinifying the rare black grape Hondarrabi Beltza.

Vineyard information: 

The Family’s vines are grown on imposing steep slopes facing east at altitudes ranging from just above sea level to 200 metres. The area is protected from the cold northerly winds by coastal hills.

Food Pairing: 

This wine is tailormade to go with wonderful fresh fish and shellfish and is served in some of the best restaurants in the Basque region and Madrid. Ernesto Chueca himself enjoys the wine with some local anchovies fresh garlic and olive oil on a big hunk of crusty bread.

Tasting Note: 

The clear and fresh lemony appearance is underlined by green reflections. The aroma is very delicate and of fruity character with tenous tropical hints and white flowers. The crispness and delicious fruity notes combine with a very slight perceived salty tang to make this wine a delight to be enjoyed!
