Don PX is made only from the best grapes of the Pedro Ximenez variety in the
region. Once ripe, the yellow bunches of delicate sweet grapes are harvested and dried on special mats in the open air; the particularly dry nights make the grapes become raisin-like, thus the concentration of flavours. The dry nights and the dry air blowing over the grapes are critical. The grapes are pressed at around 25 degrees Baume. The juice extracted is a sticky liquid called pasta (paste). The wines are fortified with high quality alcohol and then rested for 6 months. The wine is then aged in American oak (for as long as Antonio Sanchez deems necessary and known only to himself) the wine is then bottled and only released when he considers it ready. Hence vintage releases can jump forward or backwards. The result however is that the wines are always perfect on release.

Toro Albalá winery and Antonio Sanchez, its winemaker, create wines of staggering quality. Solely made with the Pedro Ximenez grape (PX), the wines are a pure expression of the philosophy at Toro Albalá: “The pursuit of quality is the main and only rule”. Antonio Sanchez is arguably considered the epitome of PX winemaking. The Toro Albalá winery is located in Aguilar de la Frontera and though originally located in an old mill (hence the name La Noria) in 1922 it moved to a former electric power station, which is its present location (also hence Eléctrico applied to its most special wines).

Vineyard information: 

Toro Albalá owns 37 hectares, all planted with the Pedro Ximénez (PX) grape and of these 7 hectares are organically grown.

Food Pairing: 

A great wine for pouring over good vanilla ice cream or to accompany blue cheese (we recommend Gorgonzola or Cabrales). Its a wonderful after dinner sweetie with plenty of interest and character. One of Spains great wines and an institution in itself.

Where to start!...firstly the deep, dark amber, dark honey colour with concentrated aromas of caramel, toast, licorice and orange peel. Flavours of dates, chocolate, nuts, fruit peel and treacle.
