Winemaking: 

A Merlot and Cabernet Sauvignon double-header, predominantly. It was matured for 12 months in new French oak barriques, while colour extraction during fermentation was gently carried out, avoiding any green and over-extracted tannins.

A 22 hectare located in the commune of Camblanes in Premieres Cotes de Bordeaux a relatively unlauded appellation for red wines. Pierre Yung the owner collaborates with Ginestet winemakers to produce the wine.

Vineyard information: 

Planted with 55% Merlot 40% Cabernet Sauvignon and 5% Cabernet Franc which is reflected in the wines blend. The vineyards have a southerly aspect and the soil is a welldrained mixture of gravel and clay. Average vine age is 16 years and the grapes are manually harvested.

Confit de canard boeuf en daube (beef braised in red wine).

Tasting Note: 

Deeply coloured ruby/purple. There is power, body and a rich fruitiness here, with hints of cigar-box spice. Well-structured in a classic firm Bordeaux style, it is very much a product of the typical 2004 vintage, a vintage that will in Sissan’s case, drink well and improve over the next 5-7 years easily.
