Winery Info:

After prolonged research the Cusine family owners of the emblematic Castell del Remei decided to purchase land on the northern slopes of Montsant in the extreme south of Costers del Segre; and the Cervoles estate located in La Pobla de Cervoles dates back to 1997 with 32 hectares of vineyards. The two wines Cervoles Blanc and Negre are named after the Young Deer that live in the woods next to the vines.

Vineyard information:

This is an area of complex and rugged geography with numerous hills and valleys and the vineyards are quite widely dispersed. Cabernet Sauvignon Tempranillo Merlot Garnacha Chardonnay and Macabeo are distributed in ten different plots and were mainly planted between 1960 and 1989. At 700 meters altitude and with annual rainfall of some 450mm weather conditions are not exactly friendly and this is precisely the magic in Cervoles: with naturally limited productions and plants that produce small quantities of concentrated grapes. The soil is Francclayey with abundant gravel. The structure of these soils along with the low rainfall gives the necessary hydric stress for quality viticulture. The 05 harvest had a long and cold winter with a warm and dry autumn. The summer had a high temprature contrast between day and nigh giving good skin concentration. The Tempranillo was harvested in the beginning of September and the Merlot around the 15th of the same month. The Cabernet Sauvignon at the beginning of October and the Grenache was harvested around the 12th.

Food Pairing:

Tasting Note:

Dark cherry coloured with a slight bluish rim. On the nose it is complex initially cedar coco and coffee then plums and wild black fruits with notes of thyme and pencil shavings (wood and graphite) from the French oak and mineral characteristic of the Cervoles terroir . On the palate it is powerful and balance. Good well integrated acidity combines with black berry fruits and spicy notes to form a structured and voluptuous mouthful with a long mineral finish.
