Fermented In new French oak barrels of Tronçais and Allier, fine grain selection from forests in centre France, from the coopers Saury, Sylvain and Dargaud&Jaegle (medium and medium+ toasts). The varieties were fermented separately and left on there lees for 8 months with batonage before assemblage. limited production of 8,893 bottles.

After prolonged research the Cusine family owners of the emblematic Castell del Remei decided to purchase land on the northern slopes of Montsant in the extreme south of Costers del Segre; and the Cervoles estate located in La Pobla de Cervoles dates back to 1997 with 32 hectares of vineyards. The two wines Cervoles Blanc and Negre are named after the Young Deer that live in the woods next to the vines.

Vineyard information: 

This is an area of complex and rugged geography with numerous hills and valleys and the vineyards are quite widely dispersed. Cabernet Sauvignon Tempranillo Merlot Garnacha Chardonnay and Macabeo are distributed in ten different plots and were mainly planted between 1960 and 1989. At 700 metres altitude and with annual rainfall of some 450mm weather conditions are not exactly friendly and this is precisely the magic in Cervoles: with naturally limited productions and plants that produce small quantities of concentrated grapes. Manual harvest with strict grape selection and a green harvest ensure quality. The 06 vintage had a rigorously dry and warm spring and summer but the altitude gives a good thermal contrast securing a fine balance or ripeness and acidity. The Chardonnay was harvested from 4th to 8th of September and the Macabeo from 26th to 28th of the same month.

Tasting Note: 

Pale yellow in colour with a hint of green. Intense cultured nose of white flowers sage and aniseed. On the palate lime and other green citruses developing into notes of fresh tropical fruit and green melon next to light smoky oak notes. An elegant balance of vivid acidity and fruit with weighty creamy lees flavours . Long finish with honey lemon and vanilla. A very classy white!
