The wine had 2-3 weeks skin contact maceration in 2004, and then was aged in new French oak barrels for approximately 12 months.
Bailly de Camensac is the second wine of Chateau Camensac a 5th Growth in the 1855 Medoc classification. Located in the St Laurent commune Camensac entered the modern era when the Forner brothers (of Marques de Cacares fame) bought it in 1964. A total rehabilitation took place with vineyard replanting chai rebuilding and the employment of the services of first the legendary Professor Emile Peynaud as oenologue and latterly Michel Rolland before his widening commitments forced him to rein in his Bordeaux consultancies. The result has been a great shift upwards in quality here and this relatively unknown Medoc jewel is still underregarded and modestly priced. Camensac has been on form now for 1015 years.
An 85 hectare estate planted to 60% Cabernet Sauvignon and 40% Merlot which is exactly mirrored in both the grand vin and Bailly de Camensac. St Laurent commune is inland Medoc away from the Gironde and the gently sloping vineyards are predominantly gravel. The second wine Bailly de Camensac usually made up of young vine fruit but otherwise the same care and detail is taken in the chai as with the grand vin.
Most good beef dishes, roast lamb and medium cheeses. For for a great treat try with Tournedos Rossini (fillet of beef in a tower of fois gras, truffle or ceps in a Madiera sauce).
Cabernet Sauvignon and Merlot
